Korean Braised Beef Short Ribs

We got some beef short ribs on a whim just because they looked so amazing. I had never cooked them or done anything with them before in my life though.

After thinking about what to do with them I had this idea of making Korean Style Beef Short Ribs. Well normally when I make Asian food (not Pakistani/Indian) the flavors never turn out quite right since well I have never really experimented with them that much.

Anyway I decided to give this a whirl. I marinated them for 24hrs or so then I decided to cook them in the crockpot and you can see the end results for yourself!

So we couldn’t figure out what to make for dinner decided to go to the grocery store. I saw some beef that looked great to me and well I was like I’ve never made Kebabs before so lets give this a whirl. As for the starch to go with them I made some Couscous with garlic and olive oil.

It turned out pretty good and only took about 20mins total.

Chicken Tikka Pizza (Semi Thin Crust Edition)

Okay so I decided to see if I could get my pizza crust thinner and maybe it would be a little less doughy in the center and cooked all the way through.

 

Regardless the last pizza still turned out amazing but here is the one with the new technique.

 

So this time what I did was put some cornmeal down on the cast iron skillet, once it started to smoke a little bit I put the dough on it to start cooking it before I put the ingredients on it. In this case I was going to put some fresh mozzarella cheese, bell pepper, onion, chicken breast that was cut up and marinated with some chicken tikka seasoning.

Once the crust reached what felt like its half way point of cooking I put on the pizza sauce, cheese and the rest of the toppings. I finished the pizza off with the broiler on for a couple of minutes (I also have the worlds weakest oven, once an omelet was left under it for 10 minutes and it did not burn the omelet. So you get the idea)

Grilled Glazed Teriyaki Chicken Breasts

Decided to marinate these chicken breasts in teriyaki sauce, some brown sugar, soy sauce, chili oil and a few other things. I let it sit in the fridge in the marinade for a few days.

I cooked it up on the cast iron grill pan that I have and then let it rest and served it with some steamed rice and green beans that were cooked in some of the marinade of the chicken.

I used the marinade in the pan and cooked it down to great a glaze for the Grilled Glazed Teriyaki Chicken.

 

Blacked Cajun Salmon with Quinoa and Spinach Patties

Blacked Cajun Salmon with Quinoa and Spinach Patties. I got the idea from a few different recipes that I read online. A few from SA actually, hey fellow goons 🙂

The salmon was cooked in the skillet skin side down at first for about 4 mins then I flipped it over and the skin pealed right off. I seasoned that side as well and cooked it for about 5 mins on the other side flipping it one last time to get a crust on both sides of the filet.

For the Quinoa patties we cooked the spinach in a little olive oil and garlic. Cooked the Quinoa in the rice cooker and it turned out perfect. Combined the two and added probably 2.5-3 eggs the recipe I had found called for 4 eggs but that looked like way too much so I didn’t end up adding that many eggs. I added Panko Season Bread Crumbs to help absorb the moisture from the eggs. I fried them in some olive oil and served with the Cajun Salmon Fillets.
